We’ve always had an appreciation for healthy eating, but our understanding of what healthy eating looks like has changed over the course of the last 15 years. There are so many trends and guidelines around healthy eating, it can often be hard to know who to trust. While we have dabbled in some of the trends ourselves, we often come back to a quote from Michael Pollen, “Eat food. Not too much. Mostly plants.” Eating food…that’s ultimately what led us down this path to becoming farmers. There are a lot of “food-like products” out there that may fill our stomachs, but they lack the wholesome nutrients of organically grown fruits and vegetables or the rich protein and flavor of animals allowed to forage in their natural environments.

Locally Sourced

The advancement of refrigerated shipping fundamentally transformed where we get our food, how we prepare it and when we eat it. Seasonality lost all relevance in the kitchen. Shelf stability and transport resilience became the features used to measure quality of produce. And we believe this is a great shame. Regardless of the dietary trend you support, we believe the healthiest diet is one composed of foods grown or raised locally in your community.

Heritage Cooking

Too many kitchens are filled with gadgets and gizmos meant to make cooking easier. But, we believe nothing could be further from the truth. All you really need to put exceptional food on the table is a cutting board, a nice sharp knife, a cast iron pot and pan, and a small collection of herbs and spices. We love the simplicity of heritage cooking because it relies on the basic, but versatile, skills of sautéing, braising, roasting and baking. While many heritage cooking skills like fermenting and making sourdough bread seem challenging, it just takes a bit of experimentation to transform ordinary ingredients into nutrient rich foods!
