In the summer, smoothies are our go-to option for lunch along with a salad or sandwich. Each day we ask our kids what color smoothie they would like and we begin brainstorming about the combination of fruits and vegetables to get us close to the desired hue. With an abundance of beets in the garden at the moment nearly every smoothie has included either red or golden beets (to help us achieve the intended color) along with the beet greens.
While I’ve put together a “recipe” here, in our household we use it more as loose guidelines to get the right proportions, but improvise liberally based on the ingredients available!
Beet Berry Smoothie
A simple, delicious smoothie packed with fruits and veggies to add extra nutrients to your diet!
Ingredients
- 1 Cup Orange juice
- 1 Cup Water kefir or kombucha You could also use additional juice, milk or water instead
- 1/4 Cup Plain yogurt
- 1 Whole Beet, including greens Roughly chopped
- 1 Whole Carrot Roughly chopped
- 1 Cup Berries Frozen or fresh
- 1/2 Cup Mango Frozen
- 1 Whole Banana Frozen, broken in large pieces
- 1 Tbsp Chia seeds
Instructions

Add all ingredients to blender (beginning with the liquid). Blend on low and gradually move to higher speeds. Process for about 1 minute or until your desired level of chunkiness for your smoothie.
