Grapefruit arugula salad

A bright, refreshing salad with a delicious homemade dressing

Ingredients

  • 2 cups arugula
  • 2 cups spinach
  • 1/2 cup red onion sliced thinly
  • 1/4 cup pine nuts toasted
  • 1 grapefruit peeled and sectioned
  • 1/4 cup berries

Dressing

  • 1/2 cup olive oil extra virgin
  • 1/3 cup lemon juice freshly squeezed
  • 1 tsp dijon mustard
  • 1 clove garlic minced
  • 1 tsp honey or maple syrup
  • salt, pepper and herbs to taste

Instructions

  1. Wash and assemble the greens.

  2. Toast the pine nuts on stove in a dry pan for about 5 minutes. Watch them closely and move the pan frequently to prevent them from burning. Remove from heat as soon as you see them starting to turn brown. They go from not quite ready to burnt in a matter of seconds.

  3. Add red onion slices, grapefruit sections and berries and toss the salad

Dressing

  1. Combine all the ingredients in a small mason jar, attach and lid and shake! You may also use a whisk to mix if you prefer, but shaking is just more fun...and an easy job for the kids.
