Lemon artichoke chicken

This delicious dish pairs the rich chicken flavor with bright lemons, artichokes and capers. It's a great weeknight meal that still looks fancy enough to be served for a special occasion.

Ingredients

  • 4 tbsp butter
  • 3 lbs chicken bone-in, skin-on
  • 2 shallots sliced
  • 2 cups artichoke hearts
  • 1/4 cup capers
  • 8 wedges lemon
  • 1 sprig lemon balm
  • Salt & pepper

Instructions

  1. Preheat oven to 375°F.

  2. Pat chicken pieces dry and salt generously.

  3. Melt 2 tbsp butter in a large, oven-safe skillet. Place chicken pieces in a single layer and sear (about 3 minutes each side). Remove and set aside.

  4. Melt remaining 2 tbsp butter in pan and add shallots with a pinch of salt. Saute until they are translucent.

  5. Add artichoke hearts, capers, lemons, lemon balm and chicken pieces to the pan.

  6. Place the entire skillet in the oven for 45 minutes or until the chicken reaches an internal temperature of 165°F.
