Pastured poultry out in the field
In a slight variation on our seed to plate series, we’ll take you out into the pasture to show you our chicken operations. We raise “pastured poultry,” which means our birds spend their lives foraging on fresh grasses and the bugs living in the plants and soil. We’ll walk you through the set-up for both our meat birds and our laying flock. And you’ll get to see how silly turkeys really sound!
How to part a chicken
Next, we’ll take you into the kitchen to show you how to quickly and easily part a whole chicken into eight pieces. This is an essential skill that used to be passed down across generations. Unfortunately, the prevalence of pre-cut and skinless options in grocery stores resulted in the gradual loss of the skill. Heck, we didn’t learn it ourselves until well into adulthood. Thankfully, youtube has answers to most questions, and Gordon Ramsey’s tutorial helped us quickly master the technique. If parting a chicken makes you to feel as lost as we once were, this video will help you prepare your whole chicken for numerous recipes and allows you to have a beautiful presentation on your dinner table.
