Cucumber Smoked Salmon Bites

Cucumber, goat cheese, smoked salmon and fresh herbs – simple, refreshing and delicious. When preparing for a party we like to have appetizers that are easy for guests to enjoy while also providing options for those with dietary restrictions. These gluten-free snacks are great finger foods that can also be served as a quick snack or weekday lunch. It would be simple to make them paleo by substituting out the goat cheese for a dairy-free spread. You can also mix up the flavor by trying different herbs – thyme, dill, red pepper flakes. Be creative!

One of the best things about this recipe is it literally takes about 5 minutes to pull together, yet looks really classy. It can be made a few hours in advance and stored, covered in the fridge as well.

Cucumber smoked salmon bites

A simple, gluten-free appetizer that is quick to assemble and so refreshing!

Ingredients

  • 2 Cucumbers
  • 8 oz Goat cheese
  • 4 oz Smoked salmon
  • 1 tbsp Chives Minced
  • Salt and pepper

Instructions

  1. Wash and slice the cucumber into 1/4” rounds.

  2. Spread a small dollop of goat cheese onto each cucumber slice and top with a piece of smoked salmon.

  3. Sprinkle with chives and freshly ground salt and pepper.
