Summer squash: From seed to plate

How to grow, harvest and prepare summer squash

In our seed to plate series we’re showing you how we grow, harvest and prepare each crop. We provide a sneak peak of the information included here and you can find the full content in our Seed to Plate Tutorials. This week we’re going in-depth with summer squash. This includes plants like zucchini, yellowneck squash and pattypan squash. This video will provide growing and harvesting tips to get the most out of your summer squash.

You can eat the thin skin of a summer squash, which opens up a lot of possibilities in the kitchen. They can be eaten raw, spiralized into “zoodles”, grilled, roasted, sautéed…so many options! Join us as we prepare roasted ratatouille toast inspired by Andrea Bemis from Dishing Up the Dirt. This appetizer is also great for a summer dinner, especially when paired with a quick green salad. For the roasted ratatouille recipe, check out Andrea’s website.
